Restaurant Profile
For this assignment, select a full service INDEPENDENT restaurant to profile. The restaurant which you select must be in Dallas, Texas.
Prepare a cover sheet, showing your name and the date. Also show the Restaurant name and complete address on the cover sheet.
In the body of your paper, include the following:

1. Location Characteristics – Describe the location, including the surrounding area (e.g., business/residential/manufacturing).
2. Accessibility – Document the ease or difficulty of reaching the restaurant from streets/ highways. Describe parking (free or fee, shared, # of spaces vs. size of facility, etc.)
3. Visibility – Discuss the visibility of the restaurant from the street and the effectiveness of signage.
4. Exterior Appearance – Describe the general external appearance of the restaurant. Are there signs of wear and tear or has it been updated/renovated?
5. Interior Appearance – Record your impressions on the interior design, decor, lighting and degree of cleanliness.
6. Restaurant Personality – Describe the personality of restaurant.
7. Layout of FOH (and BOH if possible) – In visual terms, describe the layout of the front of the house. Include seat style and arrangement, service areas, restrooms, bars, host stand, etc. If the back of the house is visible or if the manager will give you a tour, then describe that layout also.
8. Number of seats – Record the number of seats in the restaurant (include smoking vs. nonsmoking, or indicate if all nonsmoking). Indicate the breakdown between bar vs. dining if applicable. Describe the types of seats – table, booth, bar.
9. Meals served – Indicate the operating periods.
10. Price range – For each meal served, list the menu items that are lowest and highest in price to indicate the price range. Also specify drink prices (non-alcohol and alcohol) and collect a menu if possible.
11. Type of service – What duties are performed by the FOH staff? Approximately how many?
12. If possible, talk to the owner or a manager. Ask them if they could change anything regarding location, layout or look – what would it be and why?
13. Conclusion – What is your overall impression of the facility?
Visit your selected INDEPENDENT restaurant, make your observations and record the answers to your questions. Then complete the profile, addressing each question by number. Your paper should be typed and double spaced, with a minimum of two pages plus the cover sheet. NOTE: 50% penalty will apply if restaurant is not Independent. (50 points)
