Assignment

Heating, ventilating and air conditioning (HVAC) is the combined technology of indoor environments. It is important to the comfort of indoor air quality. Proper ventilation is required for good quality air. A well operating system must be able to not only provide a desirable temperature control but have ventilation that removes dust, smoke, airborne bacteria, odors, moisture and carbon dioxide. It is very important that a HVAC system has ventilation system that provides adequate oxygen replenishment with makeup air.

Ventilation Systems capture and exhaust the hot air, grease, odor, etc. that is generated by cooking equipment. They also capture and exhaust moisture and heat generated by dish machines and other equipment that uses hot water. There must be a supply air (replaced air) put back to the exhausted area. The air transfer of exhaust is expressed in CFM (cubic feet per minute) / linear foot.

· Research and identify a hood ventilation system that provides exhaust and air supply for a kitchen.

· Identify several hood systems and the styles of canopy.

· Explain the different filter designs available and their differences of filtering various types of air.

· Give several examples of exhaust requirements of your selected equipment for the various type of hood/filter and the CFM necessary to provide adequate air exhaust.
